Chocolate Peanut Butter Cupcake...take 2

So Eric at work requested the Chocolate Peanut Butter Cupcake for his birthday today. I decided to make the frosting last night, which turned out amazing and VERY, VERY peanut buttery and make the cupcakes this morning.

So I woke up bright and early to get started on the Chocolate Cupcakes and well the first dozen came out a bit sunken in. I am not sure if I mixed too much or added too much Cocoa Powder (I added 2 more tbs than the recipe requested) and it totally bummed me out. They still tasted fantastic but I think I need to not make the core so big so there is less frosting in the middle. I used my new larger piping tip and bag and they came out pretty nice. I added mini Reeces PB Cups and crumbled cake as garnish. All in all they look alright and they actually taste yummy.

I really do need to refine my piping and decorting skills. Looks like I will be taking that cupake class at Epicurean

This Week...

I am making two different cupcakes this week both for birthdays!!

First is my Chocolate Peanut Butter Cupcake for Eric at works birthday. I am going to refine the recipe from last time and add in reese's peanut butter cups and also a fluffier Peanut Butter frosting so I can use my new piping tips. Also adding some crushed up peanut butter cups on top of the frosting instead of the chocolate shavings.

Second is 3 dozen Red Velvet Cupcakes for my Aunt's 50th Birthday. Not much changing here. Last time I made the Red Velvet it turned out pretty good. The only change is I am adding REAL Vanilla Bean to the cream cheese frosting. So it will be a Red Velvet Cupcake with a Vanilla Cream Cheese Frosting.
